When Chummy and I get together, we always seem to end up cooking something. And it always ends up being great food. This warm summer evening we explored the unchartered territory... of chicken thighs.
We combined apricot jam, a little fresh lemon, and some peppercorn for marinating. We pretty much just mixed them to taste. after we spread the marinade on the thighs, we inserted a sprig of rosemary between the skin of the chicken and the meat, to keep it in place & to flavor it while it was cooking. After the chicken was grilled, the rosemary was removed for serving. This delicious dish combined with some garlic & tomato couscous made for a light but savory & delicious dinner, perfect for a summer evening. 10/10 highly recommend.
Another perfect element of a summer evening is a glass of Pimm’s. For those of you- like me- who have never heard of Pimm’s before, Pimm’s is a popular fruit drink or liqueur in England. You typically combine the liqueur with “English Style” (clear & carbonated) lemonade, which is often substituted with ginger ale (which we did). Then fruit is added to the mix- we used strawberries, oranges, blueberries, blackberries and raspberries, although any fruit will do. A sprig of mint is often used as a garnish. All these ingredients come together to form a delicious, refreshing drink perfect for summer festivities.
